Gujarati Khandvi - Roll your way to deliciousness with this easy and flavorful Khandvi recipe!
Now, It may look complicated but actually the easiest snack to make. Requires just basic ingredients & that texture of soft besan and flavours of tadka makes it one of the most popular snack all over the world. In Gujarat, we call it Dahin Vadi as well.
Ingredients:
1 cup fine Gram Flour (Besan)
1/2 tsp Asafoetida Powder (Hing)
1 tsp Turmeric Powder (Haldi)
Salt as per taste
1 cup Sour Curd (Khatta Dahi or to make it sour squeeze 1 lemon in it)
1.5 cup Water
For Tadka:-
2 tbs Oil
Mustard Seeds
Pinch of Asafoetida Powder (Hing)
White Sesame Seeds (Safed Til)
Chopped Green Chillies
Curry Leaves
Freshly grated Coconut
Method:
In a deep base pan, take 1 cup Besan
Add 1/2 tsp Hing
Add 1 tsp Haldi
Add Salt as per taste
(You can add a little Ginger-Garlic paste as well)
Add 1 cup Dahi (Khatta)
Combine everything together with the help of spoon
Gradually add 1.5 cup Water
Keep mixing to make pouring consistency batter
Keep the pan on gas heat, put it on medium flame
Keep stirring else it will stick to the bottom
Cook for 10-12 minutes
Cook until batter gets thickened
To check if the batter is ready:
Apply batter on a greased bottom of a steel plate, leave for 2 min
If it doesn’t roll, cook and stir for another 2 min
(Check again with the same process)
If the batter is ready to roll Khandvi
Take a steel plate greased with oil
Spread the batter on it and make thin layer
Make cuts with a knife on the spread batter and roll Khandvi
Let's prepare tempering Tadka for Khandvi
Heat 2 tbs Oil in a pan
Add Rai, pinch of Hing, Safed Til, chopped Green Chillies & Curry Leaves
Let it crackle & pour it on Khandvi
Sprinkle freshly grated Coconut
Enjoy Scrumptious Khandvi
