Sindhi Koki Recipe | सिंधी कोकि का ऐसा स्पेशल नाश्ता केवल गेहू के आटे से बना जो ना है रोटी ना है पराठा I have so many memories attached to Koki; as my neighbour Sindhi aunty used to give Koki to me in tiffin. During my banking days, I used to not only have it in lunch; would save half Koki to have with tea as well. The dual roast with ghee and onion plus spices flavour inside; just sets Koki apart from anything I ever had in my life. This may initially look like Paratha preparation; but half way through it changes the process completely upside down. Ingredients : 2 cup Wheat Flour (Gehu ka atta) 1.5 tsp Cumin Seeds (Jeera) 1 tsp Carrom Seeds (Ajwain) Kasuri Methi 17-18 coarsely crushed Black Pepper (optional) Finely chopped veggies (Onion, Coriander & Green Chilli) Approx 1 tbs Ghee (alternatively Oil can be used) Water (to knead dough) Method : In a mixing bowl, add 2 cup Wheat Flour (Gehu ka atta) Add 1.5 tsp Cumin Seeds (Jeera) Add 1 tsp Carrom Seeds (Ajwain) Add some Kasuri Methi Add Salt as per taste Add 1/2 tsp Turmeric Powder (Haldi) Add Red Chilli Powder (as per taste) Further add 17-18 coarsely crushed Black Pepper Add finely chopped veggies (Onion, Coriander & Green Chilli) Add approx 1 tbs Ghee Combine everything together with hands Gradually add Water and softly knead a dough Take handful of dough and roll out few balls Now heat the pan, take a dough ball and gently press it Place it on the pan and warm for 10 sec each side Take it on a rolling board and roll thick koki (as aloo paratha) Prick with the help of knife / fork Place this koki on the heated pan Cook on medium flame Flip and drizzle some Ghee Cook both the sides until nice golden-brown (Make more kokis with the same procedure) Enjoy Scrumptious Sindhi Koki with Achar and Dahi . .
