This is my easy and spicy Mexican chicken fajita recipe. Mexican Chicken Fajita Wraps INGREDIENTS: 4-6 large tortillas 1 - 1 1/2 pounds boneless skinless chicken breast sliced in strips 1 thinly sliced green bell pepper 1 thinly sliced red bell pepper 1 thinly sliced red onion - I had white scallion onions 1 tbsp minced garlic 1 tbsp minced ginger Chicken SPICES: 1 tsp salt 1/4 tsp ground black pepper juice of 1/2 lemon 1 tbsp extra virgin olive oil or butter 1 tbsp ketchup 1/2 tsp hot sauce 1 chicken cube Add 2 tbsp butter to medium high skillet. Add chicken and cook for 5-8 minutes until the chicken is done. Add 1 tbsp oil to same pan and add vegetables. Cook for 1 minute and add minced garlic, 1/2 chipotle pepper and stir. Cook for 3-4 minutes. Stir until well combined and remove from the heat. Serving tonight with mayo salsa, MAYO SALSA: 2 tbsp Mayonnaise 2 tbsp garlic mayonnaise 2 tbsp yogurt Mix above ingredients together in bowl. Refrigerate for 1-2 hours - Enjoy.
