For example when you make a change in your CSS, instead of FTP-ing those changes up the wire, you can simple save and view the changes in your browser almost instantly. Also, image having to build out a new feature on a website, and doing all of the development on the live site. That would mean visitors to the live site would see weirdness whilst you're pushing changes up to the site to view them; not a good scenario!
