Our lemony scones are bursting with blueberries and make a perfect treat for breakfast or afternoon treat with tea. It’s a triple punch of flavor with lemon yogurt, fresh lemon juice, and super flavorful lemon zest. You’ll want to make an extra batch to share or freeze for another day. Blueberry Lemon Scones Prep time: 20 minutes Bake time: 15 minutes Makes 9 scones Ingredients 2 cups all-purpose flour 1/3 cup sugar 2 teaspoons baking powder ½ teaspoon baking soda ¼ teaspoon salt 6-8 ounces lemon yogurt, 1 container 1 large egg, whisked ¼ cup butter, melted 1 cup fresh or frozen blueberries ¼ cup granulated sugar, for topping Zest of 2 lemons Glaze ½ cup confectioner’s sugar 1 tablespoon lemon juice Directions 1. Preheat oven on Convection Bake 400°F. Prepare a baking sheet with parchment paper. 2. In a large bowl, combine the dry ingredients. Add lemon yogurt, melted butter, and whisked egg. Fold in blueberries. Using a large scooper, fill the tray with about 9 scones. In a small bowl combine, 2 tablespoons of granulated sugar with the zest of 2 lemons. Pat down the dough, using water on your fingers if needed, and top each scone with lemon zest sugar. 3. Place tray in preheated oven and set timer for 12-15 minutes. 4. In a medium bowl, combine confectioner’s sugar and juice from 1 lemon, about 1 tablespoon. 5. Remove scones from the oven and allow to cool completely before drizzling with lemon glaze.
