Surprisingly simple, Spaghetti Carbonara is an impressive recipe to make at home any night of the week. With a creamy sauce made from just eggs and cheese, the addition of smoky cured pork and black pepper is what makes it a carbonara. Many say Spaghetti Carbonara hails from Rome and carbonaro (the Italian word for 'charcoal burner') is a testament to the black pepper flakes that look like coal. Others claim it was a hearty meal for Italian charcoal workers beginning as early as the 1830s. No matter the origin, this recipe brings comfort and fancy together in one happy bowl. Spaghetti Carbonara Prep time: 10 minutes Cook time: 20 minutes Ingredients 1/4 cup extra virgin olive oil 8 ounces pancetta, diced 1/2 cup dry white wine or dry vermouth 3 large eggs 1 cup finely grated Parmesan cheese 3 small cloves garlic, minced 1 pound spaghetti sea salt ground black pepper basil, chiffonade for garnish Directions 1. Place a large serving bowl on the oven rack, shelf level 2, and program the Special Modes, Warm-up Cookware at 175°F for 30 minutes. Alternatively, use Surround and place the rack on the middle shelf level. Bring 4 quarts of water to a rolling boil in a large stockpot. 2. While water is heating, heat oil in a large skillet over medium heat until shimmering, but not smoking. Add pancetta and cook, stirring occasionally, until lightly browned and crisp, about 8 minutes. Add wine and simmer until alcohol aroma has cooked off and wine is slightly reduced 6-8 minutes. Remove from heat and cover to keep warm. Beat eggs, cheeses, and garlic together with a fork in a small bowl; set aside. 3. When water comes to boil, add pasta and 1 tablespoon sea salt; stir to separate pasta. Cook until al dente; reserve 1/3 cup pasta cooking water and drain pasta for about 5 seconds, leaving pasta slightly wet. Transfer drained pasta to warm serving bowl; if pasta appears dry, add some reserved cooking water and toss to moisten. 4. Immediately pour egg mixture over hot pasta, sprinkle with 1 teaspoon sea salt flakes or 3/4 teaspoon table salt; toss well to combine. Pour pancetta mixture over pasta, season generously with black pepper, and toss well to combine. Garnish with basil and serve immediately. Yield: 4 to 6 servings.
