Why serve plain corn on the cob when you can make it Mexican Street Corn? First, we steam the corn to perfection using our Combi-Steam oven’s MasterChef program. Next, we grill it on our Induction Cooktop for a smoky char that is the perfect base for topping with crema, cheese, cilantro, and spicy corn chips. Serve at your next fiesta! Mexican Street Corn Prep time: 10 minutes Cook time: 30 minutes Ingredients 4 ears of corn 1/4 cup mayonnaise 1/4 cup Mexican crema or sour cream ½ lime, juiced ½ cup freshly grated Parmesan ½ cup queso cotija or queso fresco, crumbled ¼ cup freshly chopped cilantro Chipotle chili powder or chili powder to taste Spicy cheesy corn chips, crumbled (optional) Directions 1. Place the corn on a perforated steam tray and place in a combi-steam or steam oven. 2. Program the oven: Select MasterChef / Corn on the cob / Steam Cooking / level 1 (al dente), this will take 17 minutes. Alternately, steam the corn on the stovetop using a steamer basket or boil in a large pot of water until desired doneness. 3. Once the corn has been steamed, place on a hot griddle, grill, or cast iron pan until it starts to be slightly charred. Turn to char all sides evenly. 4. In a small bowl mix the mayonnaise, sour cream, and lime juice. 5. Remove the corn from the grill and slather with the mayonnaise mix. 6. Top with the cheeses, cilantro, and Chili powder crushed corn chips.
