Snowskin mooncake Chef recipe Chef: Nguyễn Văn Khu Facebook: https://www.facebook.com/minhkhumufc Ingredients: - Glutinous rice flour: 150g - Icing sugar: 135g - Shortening: 45g - Water: 150ml - Mung bean and panda leaf filling (or any paste) - Wax gourd candied fruit Directions: 1. Mix glutinous and icing sugar together and sieve them into a bowl 2. Add shortening and water to above mixture and knead gently by hand to make a smooth dough 3. Wrap the dough with cling film and let it rest for 1 hour. 4. Divide the dough into small portions, 20 g of each (or depending on the size of the mould) and flatten each of them 5. wrap each filling ball with a dough portion. 6. cover the inside part of the mould with a coat of rice flour. 7. place the mooncake into the mould and press gently so that the mooncake fit perfectly into the mould. 8. take the mooncake out of the mould. 9. store in the fridge and let it be refrigerated and enjoy.
