Nidhi Mohan Kamal's video: Vegan Walnut Carrot Cake with Vanilla Frosting Recipe NO Maida NO Oil NO White Sugar

Here I bring to you a ULTIMATE healthy version of cake for all those who are health freaks and want to indulge from time to time. This walnut carrot cake is the perfect dessert to make for a lazy evening, when you want to gear up with your cup of tea. INGREDIENTS: Atta 1 cup Oats 1 cup Jaggery to sweeten Chia seeds - 1 tbsp Roughly grounded walnuts - 1 handful Baking powder - 1/2 tsp Baking soda - 1/2 tsp Soy milk - 1/2 cup Grated carrots - 1 cup FOR FROSTING: Soft tofu - 100 gm Soy powder - 2 tbsp Cinnamon - 1/2 tsp Vanilla extract - few drops INSTRUCTION: In a large mixing bowl put atta, oats, jaggery, chia seeds, coarsely grounded walnuts, baking powder, baking soda, soy milk and grated carrots. Mix the ingredients well until smooth. Transfer the mixture to a baking tray lined with parchment paper, sprinkle grated carrot over it and bake at 180 C for 35-40 minutes. Meanwhile, prepare the vanilla frosting by adding all of the ingredients to a high speed blender and processing until smooth.
