Legumes are good source of protein. Soaking the legumes for 8-12 hours is very important as it removes or breaks down phytic acid and makes the nutrients more available. Soaking reduces the cooking time. The beans also gets cooked well when soaked for 12 hours and it is easy to digest. But we often forget to soak beans/legumes. I have shared the tip I follow in this video. Hope it will be helpful.
