Well, we made it past Day 2! How are you all holding out? Something that kept me sane yesterday was to get out and visit the local marsh area where spring is bursting to life! I also made homemade pizza, since it was my dad's birthday. The party of three felt a little sad to me. Most times we would have had a big family shindig to celebrate, but it's okay. I'm blessed to be able to spend time with my parents. Love & prayers to everyone! "Life is Good" by The Hoppers https://youtu.be/l-ukh2v5UiA Pizza Crust 1 pkg yeast 1 cup warm water 1 tsp salt 1 tsp sugar 2 Tbsp cooking oil 2 cups whole wheat flour (sprinkle in unbleached flour at the end when you're kneading the dough until it's not sticky) Dissolve yeast in warm water. Stir in remaining ingredients. Beat vigorously about 20 strokes. (I stir it with a wooden spoon until it's mixed together well and then knead the dough until it's soft.) Let set 5 minutes. Spread on pizza pan and let rise (I usually just let it set about 5 minutes again). Bake approximately 10 minutes. Put toppings on and bake until done (appx. 20 minutes) at 350 degrees.
