Rachel Ward's video: Easy Fluffy Pancake Recipe

With it being pancake day this week what better way to celebrate the beginning spring and Easter than with a feast of light, fluffy and airy pancakes. Now if you're like me and can't choose between these thick hearty ‘american’ style pancakes or the traditional English pancakes that more resemble a crepe, then have no fear as this week i made both types so keep an eye of later in the week for my second video in this pancake segment and you won't be disappointed. Anyway here's what you need to make my easy to make no fail fluffy pancakes: Ingredients : 1 ½ cups all purpose flour (or plain flour, its the same thing) 3 tsp baking powder ½ tsp salt 1 tbsp sugar 1 ¼ cups warm milk (preferably whole milk) 1 egg 3 tbsp butter (melted) 1 tsp vanilla Method : 1) Combine all the dry ingredients into a big mixing bowl 2) In a separate bowl combine all the wet ingredients, the slowly add the wet ingredients to the dry ingredients and whisk together until combined (it doesn't matter if there are a few lumps but just so long as the majority of the mixture is combined) 3) Rest in the fridge for at least 20 minutes 4) Over a hot pan pour a big scoop of the pancake mixture and cook on either side for 2-3 minutes until golden and puffed and fluffy 5) Repeat this until all the batter is finished and top with your choice of fresh fruits, syrups or even go the savory route and top with bacon and eggs.
