Hope you are all staying safe during these uncertain times and as everyone is pretty much isolating at home, and baking has taken of massively, i though what better way than to make a day go by than to get my baking hat on, use up what i have in the pantry and get baking. I hope you are all staying safe and well, sending out positive thoughts to each and everyone of you. if you need something to do today or tomorrow and are a bit lost for what to do, then give my apple pie crumble a go, recipe below; Apple Pie Crumble Ingredients: Ingredients for crumble: 1 cup oats 1 cup flour 1 cup brown sugar 1 tsp cinnamon ½ cup unsalted butter Pinch of salt Ingredients for pie filling: 8-10 apples of your choice ½ tablespoon lemon juice ½ teaspoon lemon rind ⅓ cup white sugar 3 tbsp flour 1 tbsp cinnamon ½ tsp nutmeg 1 tsp vanilla Ingredients for crust: Pie crust of your choice (i used shortcrust pastry) Method : Preheat oven to 180 degrees. Step 1 - preparing the filling - Peel, core and chop the apples into a bowl. Mix with the sugar, lemon (juice and rind), cinnamon, nutmeg, vanilla and flour and set aside for 20 minutes to let the flavours soak up. Step 2 - preparing the crumble - Combine all the dry (crumble) ingredients into a bowl and mix together. Using cold fingers and cold cubed butter, mix the butter into the dry ingredients using your fingertips till it resembles a breadcrumb crumble consistency. (be careful not to overmix or let the butter get too soft). Step 3 - preparing the crust - Using either homemade or store bought pie crust grease and line a baking pie dish with the pastry. Step 4 - creating the apple pie crumble - Layer the apple mixture onto of the pie crust making sure to pour any leftover excess juice on top of the apples (it all adds to the flavour) Sprinkle over the crumble mixture and firmly pat it all down Bake for 45 minutes or until golden brown. Leave to cool for 20 minutes after baking before removing from the pie dish Serve with your favorite flavor of ice cream or custard and enjoy.
