FULL RECIPE: Also found on my blog here: http://www.gourmetkoshercooking.com/2013/05/roasted-tomatoes-with-bread-crumbs-and-parmesan/ 6 small plum tomatoes, halved lengthwise (I like to use small ones so that you can taste all the flavors not just the tomatoes) Non-stick cooking spray 4 tablespoons olive oil 4 cloves garlic, minced 2 tablespoons honey 1 cup panko (Japanese) bread crumbs 1 teaspoon paprika 2 tablespoons finely chopped fresh flat-leaf parsley, to garnish Kosher salt and freshly ground black pepper ¼ cup Parmesan cheese (optional) Preheat the oven to 350 degrees F. Put the tomato halves in a lightly greased baking dish, cut-side up. In a small dish, mix olive oil and garlic. Spoon garlic oil on top of tomatoes. Drizzle honey, and sprinkle with panko bread crumbs paprika, and parsley. Season the tomatoes with salt and pepper and sprinkle with Parmesan .You can omit the cheese if you do not eat dairy, it tastes great either way. (if using). Roast for 20 minutes. Transcript: Elizabeth: Great tasting tomatoes are available all year round that makes this recipe a perfect compliment to almost any meal. Elizabeth: I like to serve these tasty tomatoes aside a grilled stake or atop spaghetti with homemade marinara sauce, they add that extra touch. Readers tell me all the time that as leftovers they are great in omelets or atop homemade pizza. They are super easy to make and I can't wait to show you how. I like to use small Roma tomatoes for this dish so that when you add all the herbs and the garlic and oil every bite will be infused with that delicious flavoring. Take a 9x13 baking pan and spray it with nonstick cooking spray. You cut the Roma tomatoes horizontally and put them in the pan cut side up. In a small bowl, mix the olive oil and the garlic, stir it together and then gently spoon the oil garlic mixture over the top of the tomatoes. Drizzle the tomatoes with honey that brings out all their sweetness. Now sprinkle them with the bread crumbs, paprika, kosher salt and pepper, parsley, and grate the parmesan cheese right over the top. If you are sensitive to dairy don't worry about it just don't melt the cheese they still taste amazing. Now put them in your preheated oven for 20 to 25 minutes. When you take them out of the oven you will see the bread crumbs lightly toasted on top and the tomatoes although they are deliciously roasted will still hold their shape and color. The tomatoes are out of the oven the kitchen smells amazing. See the nice toasted bread crumbs, the cheese and the garlic are all melted together. I am going to have one now and save the rest for pasta and marinara sauce. I love recipes that do double duty. Mmm, garlic, cheese, you even taste the sweet honey. Really, really good.
