This is by far a fast dinner recipe to make that is filling & flavorful with minimal effort - Vegan Sloppy Joes with Tofu. A great plant based recipe for beginners :) Tip - Tofu Walnut Ground Meat: By crumbling your tofu with walnuts you mock ground beef texture. This technique can be used to veganize recipes that call for ground meat. Vegan Sloppy Joes Recipe: 1/2 c diced red bell peppers Optional: 1/4 c diced white onion & 2 garlic cloves 1 block firm tofu 1/4-1/2 c crushed walnuts 3c crushed tomatoes (I love Pomi Italian tomatoes) 3-4 tbsp chili powder 1 tsp Worcestershire sauce 2 tbsp ketchup 1 tbsp yellow mustard Salt & Pepper to taste Buns for serving (my favorite vegan hamburger buns are Pretzilla Pretzel Buns) Heat a large frying pan or wok (this ceramic wok is only $29 https://amzn.to/2MjBjwV) over medium heat, sautee the diced bell pepper and optional onion & garlic until they begin to sweat and soften, add crushed walnuts and crumble in the tofu so that it resembles ground beef in texture. Once your tofu walnut mixture is like ground beef crumbles, add in the crushed tomatoes, chili powder, Worcestershire sauce, ketchup, yellow mustard, and S&P. Stir all ingredients together and let simmer for 15 minutes, stirring occasionally. The vegan sloppy joes will become fragrant and the spices & sauce well integrated together after 15 minutes cooking on medium heat. I like to serve my plant based sloppy joes on a pretzel bun with a side of dill pickles! Chili Powder Recipe: 3 tbsp smoked paprika 1/4 tsp cayenne 1/2 tsp garlic and onion powder blend (I like using Trader Joes Umami seasoning) 1 tsp Cumin 1/2 tsp Oregano Blend all your spices together to create your own chili powder.
