This week I stayed at Chuckys Nature Stay in Hope Bay, Portland not too far from Port Antonio. Its an amazing Riverside collection of handbuilt wooden cabins. The river water is crystal clear and Chucky is an amazing Rasta who lives naturally off the earth. Tonight Im using some random bits lying about to cook a Rasta color-inspired dish.
