QUICK STRAWBERRY CHEESECAKE Ingredients 12-15 strawberries + slices 1½ cups cream cheese ½ lemon ½ cup castor sugar 10-12 digestive biscuits 2 tbsps butter ⅓ cup condensed milk ¼ cup whipping cream 1 tsp vanilla essence Method 1. Cut the strawberries and put in a bowl. Squeeze lemon juice, add sugar, mix well and set aside for 10-15 minutes. 2. Crush the digestive biscuits, add butter and mix until the mixture resembles like breadcrumbs. 3. Add the biscuit crumbs in a serving glass, press it firmly, and refrigerate it for 5-10 minutes. 4. Beat cream cheese until light and fluffy, add condensed milk, whipping cream and vanilla essence, beat again until well incorporated. 5. Arrange the strawberry slices on the sides of the serving glass and spoon a portion of the strawberry compote on the biscuit base, pipe out the cream cheese mixture and finally spoon a small portion of compote on top. 6. Garnish with mint sprig and serve.
