Urad dal made even more flavourful and nutritious with the addition of spinach leaves. This dal is going to be a family favourite in no time. HARIYALI URAD KI DAL Ingredients 4 tbsps oil 2 tbsps butter 2 tsps chopped garlic 1 tsp chopped ginger 2 green chillies, chopped 2 medium onions, chopped 1½ cups blanched spinach puree 2 cups cooked whole black gram (sabut urad) 1 tsp dried fenugreek leaves 2 tbsps fresh cream + for garnish 4 dried red chillies, stemmed ½ tsp garam masala powder Ginger strips for garnish Method 1. Heat 2 tbsps oil and 1 tbsp butter in a deep nonstick pan. Add 1 tsp garlic, ginger and sauté for a minute. 2. Add green chillies and mix well. Add onions and sauté till golden brown. 3. Add turmeric powder and mix well. Add spinach puree and mix well. 4. Add dal and mix well. Add 1½ cups water and mix well. 5. Add fenugreek leaves, remaining butter, fresh cream and mix well. 6. Heat remaining oil in a small nonstick pan. Add remaining garlic, dried red chillies and sauté till garlic is golden brown. 7. Add this tempering to the dal and mix. Add garam masala powder and mix well. 8. Transfer into a serving bowl. Drizzle fresh cream, garnish with ginger strips and serve hot.
