We love many different dim sum dishes, one of them being Har Gow (shrimp dumplings). With the low tide this week, we wanted to incorporate mussels into this popular dish and make mussels dumplings instead! Dumpling Ingredients: Wheat Starch (3/4 cup), Tapioca Starch (2 tbsp), Salt (1/4 tsp), Vegetable Oil (2 1/2 tsp), Mussels, Shiitake Mushrooms, Bamboo Shoots, Garlic, Sesame Oil (splash), Cornstarch (1 tsp), Pork Fat (1 tbsp) Feel free to use however much of the filling ingredients you want! Directions: Filling 1. Parboil mussels until they start to open. Remove from water, open shell, and remove meat. Dice mussels, leaving a few pieces whole. Add to bowl. 2. Dice up shiitake mushrooms and sauté for a few minutes until softened and add to bowl. 3. Dice bamboo shoots and add to bowl as well. 4. Add in splash of sesame oil, cornstarch, and pork fat. 5. Mix ingredients together in bowl and place in fridge until ready to fill wrappers. Wrapper 1. Sift 3/4 cup of wheat starch, two tablespoons of tapioca starch (or potato or corn starch) and 1/4 teaspoon of salt into a bowl. 2. Slowly add in half a cup of boiling water. 3. Add 2 and 1/2 teaspoons of vegetable oil. 4. Mix with a chopstick and once it starts to look crumbly, pour out onto an oiled surface. 5. Knead dough until an elastic ball is formed. 6. Place it back in the bowl and let it rest for 5 minutes with a towel on top. 7. Take around 17 grams of dough and rolled into a sphere. 8. Use bench scrapper to flatten the sphere into a circle and then continue to roll that out into a thin dumpling wrap with a rolling pin. 9. Once you roll it out, place the filling with the whole mussel towards the center of the dumpling. 10. Fold the skin in half and pleat one half onto itself until you’ve reached the end. 11. Press down on it to make sure that it’s sealed. Use scissors as needed to cut off the excess dough. 12. Push edges down to make a “U” shape. 13. Place in them in a steamer and steam for around 10 minutes. 14. Enjoy!
