Ingredients Basmati Rice - 2 cups Bread pieces - 3 to 4 slices Onion - thinly sliced - 1 medium Split Cashews - 15 to 20 Raisins - 15 to 20 Oil - 1/2 cup Ghee - 2tbsp + 2 tbsp Cinnamon (1 inch stick) - 2 nos. Green Cardamom - 3 Star Anise - 1 Cloves - 6 Black Cardamom - 1 Bay Leaf - 2 Ginger Garlic Paste - 1tbsp Sliced Onion - 1 big Slit Green Chilli - 3 Beans - 1/4 cup Carrot - 1/4 cup Green Peas - 1/4 cup Chopped Coriander - 1/2 cup Chopped Mint - 1/2 cup Curd - 1tbsp Boiled Water - 5.5 cups Salt - 1.5 tsp or as per taste Instructions 1 - Soak Basmati Rice Take basmati rice in a vessel. Wash couple of times and then soak it for 20 minutes. After 20 minutes, drain the water and set the rice aside. 2 - Preparing Items for Garnish: Heat Ghee in a pan. Fry the cashews until they turn slightly brown. Remove from the pan and fry raisins in the same ghee. When the raisins popup and start turning brown, remove them from the pan. In a separate pan, pour some cooking oil. When the oil turns hot, add in finely chopped onion and sauce it. Add in a pinch of salt to cook them fast. Keep the flame on medium and fry them until they turn slightly brown. Remove onto a kitchen towel to get rid of the excess oil. In the same oil, fry the bread pieces from both the sides until they turn golden brown. Remove them as well on to a kitchen towel and set aside. 3 - Preparing the Vegetable Pulao Add ghee or cooking oil to a big pan. When it turns hot, add in the whole spices - cinnamon, green cardamom, star anise, black cardamom, cloves, bay leaf. Saute for a minute or two. Add in ginger garlic paste and saute until the raw smell is gone. Add in sliced onion and saute it until it turns translucent. Add in little salt so that they get cooked quickly. Add in slit green chillies and sauce until the onions turn slightly brown. Add in the chopped vegetables like beans, carrot and also green peas. Saute for couple of minutes. Add in chopped coriander leaves, chopped pudina or mint leaves and sauce for a couple of minutes until a nice aroma comes out. Add in some curd and saute for a minute or two. Now add the soaked basmati rice and fry for couple of minutes. Pour in the boiling water and stir well. Add in salt as per your taste and mix everything really well. When the mixture starts to boil, cover the pan with a lid. Simmer the flame and cook the pulao for around 15 minutes. After 15 minutes, remove the lid, and mix the pulao gently. Turn off the heat and place the lid back on the pan and let it rest for 20 minutes. After 20 minutes, you can mix the pulao once again so that all the vegetables get mixed well with the rice. Now transfer the pulao to a serving dish and garnish with fried onion, fried cashews, raisins, chopped coriander leaves, chopped mint leaves, and fried breadcrumbs. 4 - Raitha In a bowl, add in some chopped onion and chopped green chilli. Add in little salt and mix well. Press it with the back of a spoon so that the juice from the onion gets released. Now add in chopped tomato and chopped cucumber and mix again. Add in the curd and some more salt as per taste. Mix everything really well. Add some water if required to adjust the consistency. Now the raita is ready.
