List of Ingredients (Yields 1 Croque Madame and 1 Croque Monsieur) 1. 2 tbsp (30g) unsalted butter 2. 2 tbsp (18g) all-purpose flour 3. 1¼ cup (312ml) milk 4. Grated Gruyere cheese: 1/8 cup (12g) of for the sauce, and 1/2 cup (48g) for the sandwich 5. A pinch of nutmeg 6. (optional) A pinch of cayenne pepper 7. 4 slices of sourdough bread 8. ¼ lbs (about 115g) sliced ham 9. 1 egg 10. (optional) Dijon mustard to taste 11. (optional) chopped parsley or chives for garnish 12. Salt and pepper to taste Notes: - Traditionally, a croque monsieur or croque madame sandwich uses Emmental or Gruyère cheese. However, if those aren’t available where you live, feel free to substitute with whatever cheese you like. - Instead of adding the cheese into the bechamel sauce, you can make a bechamel without cheese, and top the sandwich with bechamel and shredded gruyere separately. - Croque Madame usually has a sunny-side-up egg on top, but free to cook the egg however you like, and to whatever doneness you like (um…maybe not scrambled, lol) - Learn more about Bechamel sauce: https://youtu.be/AG6lFA-SCHE (starting from 00:50) 配料表 (两种三明治各一份) 1. 30g (2 tbsp) 无盐黄油 2. 18g (2 tbsp) 中筋面粉 3. 312ml (1¼ cup) 牛奶 4. 60g格吕耶尔干酪 (12g用来做白酱,48g用来做三明治) 5. 一小撮肉豆蔻 6. (可选)一小撮卡宴辣椒粉 7. 4片酸种面包 (sourdough) 切片 8. 115g切片火腿 9. 1个鸡蛋 10. 适量盐跟现磨黑胡椒 11. (可选)适量第戎芥末酱 12. (可选)欧芹碎/细香葱碎做点缀用 小贴士: - 传统的白酱起司三明治用的是埃曼塔奶酪(Emmental)或者格吕耶尔奶酪(Gruyère),大家如果买不到这两种的话可以换成自己喜欢的,比如白色车达奶酪(white cheddar),或者波罗伏洛干酪(Provolone)都是可以的哈。 - 干酪不一定要加到白酱里一起煮,大家可以先做个没有芝士的白酱,三明治进烤箱之前先加白酱,再把干酪碎加上去。 - 用来搭配这个三明治的煎蛋一般都是只煎单面(sunny-side-up),煎到蛋白凝固蛋黄还是流动的程度。不喜欢单面煎蛋的小伙伴们完全可以把蛋煎全熟,不喜欢煎蛋的小伙伴们把它换成水波蛋也成。另外如果鸡蛋不是特别新鲜,又或者是做给老人/儿童/孕妇吃的话,强烈推荐还是把蛋完全煎熟比较安全健康。 - Broiler是指用烤箱的上层火(有些高大上一点的烤箱的附带broiler用的甚至是明火),它能够快速的加热/焦化食物,所以经常用于融化食物表面的芝士/焦化各种酱汁跟食材的表面。大家的烤箱如果没有这个功能那就把烤箱上层预热到500℉或者260℃,也能达到差不多的效果。 - 更多关于白酱Bechamel的详细信息:https://youtu.be/1MNRX9LWWEE (从00:50开始) Produced, filmed, edited and hosted by Songling Shi Music: “Under You” by Paper Planes https://artlist.io/song/8571/under-you?search=under-you Permissions granted courtesy of Artlist.
