To draw an analogy, the difference between Chinese and Cantonese food is like the difference between European and Italian food.The word "Cantonese" here refers to the name "Canton,” which was the old name, and its officially called Guangzhou today. More broadly, "Cantonese" refers to the region around Guangdong province and Hong Kong. Since the initial waves of immigrants from China to the west mostly left China through western-owned port cities such as Hong Kong and Macau, both of which are in the region in question, Cantonese food was the first style of Chinese food to be widely available in the west, they opened restaurants, laundary shops, etc., they brought their home cooking styles to foreign countries and nowadays most Chinese restaurants in western countries mainly provide Cantonese cuisine. Nowadays, a lot of people from other part of China travel and live overseas, so it's not difficult to find a variety of other regional styles, for example sichun food which is the spicy chinese food you might try before. Many restaurants don't focus on a particular region; they serve a mix of dishes from various areas of China. Cantonese cuisine tastes quite mild and emphasizes using fresh ingredients or seasonal ingredients to prepare, the cooking methods are boiling, stir frying, steaming, charcoal (roasting), deep frying, long boiling, double boiling (steaming in a steamer for long hours), braising and finely sliced raw ingredients (eg. raw fresh water fish's skin with ginger and green onion salad or thinly sliced raw fresh water fish fillet or raw fresh water shrimps with dipping sauce), Cantonese chefs prefer to keep the natural flavours of the ingredients and using mild seasonings or marinades so that the finished dish should be well balanced and not greasy. Even the Cantonese chefs using quite a lot of different seasonings, sauces, spices or herbs, they usually use modest amounts of seasonings to avoid overwhelming the flavours of the ingredients. Yum cha is a term in Cantonese which means "drinking tea". It now refers to the dining experience of eating small servings of different foods like dim sum, while sipping Chinese tea. It is an integral part of the culinary culture of Guangdong Province.
