Greetings Food Junkie Followers, Today we are cooking up a Low Country Boil for a large crowd. A low Country boil is a traditional dish that has been enjoyed by South Carolinians for ages. It combines fresh shrimp, sweet corn, red potatoes, and smoked sausage for an all-in-one dish that is sure to be a hit at your next party. It is an iconic classic Southern recipe that you are sure to enjoy! A low country boil is a dish combining smoked sausage, corn on the cob, red potatoes, and fresh seafood such as shrimp. Some folks also add blue crab to their dish. You can add or take away what you like and still have an awesome meal. Low Country Boil goes by a few other names such as Shrimp Boil, Beaufort Boil, Beaufort Stew, Charleston Stew, Seafood Boil, and even Frogmore Stew. Now, a few years ago, I posted a video of how to make a low country boil. That video was aimed at someone wanting to make it for a small gathering. Most of the time, a Low country boil is aimed at a large crowd because it is cooked in a large pot. The recipe in this video is aimed at cooking a low country boil for 15 to 20 people. We will also show you how to use the Boil Boss and tell you what the purpose of the Boil Boss is. I think it is a great product and made of very high-quality materials. Check out the Boil Boss Site here: https://theboilboss.com/collections/main-products Here is a printable version of that recipe: https://southernfoodjunkie.com/low-country-boil/ You can do the math and double or triple that recipe but I will list the ingredients used to make this recipe and the direction here: Ingredients: --5 to 7lbs of shrimp -4lbs of Smoke sausage -1 to 2 pieces of corn per person -10lbs of red potatoes- cut into 4ths -2 6oz containers of Old Bay Seasoning -2 whole lemons cut in half -1 large sweet onion (I used Vidalia) Cut into 4ths. Optional: -Stick of butter -Cut up one bunch of celery into 4 in sections -some folks like to add fresh eggs about 10 mins before the stew is done for boiled eggs -Blue Crab -Crab legs Directions: Fill a 30 qt pot (or bigger) halfway full of water. Add the seasoning, lemons, and onion. Get the water up to a rolling boil and add the potatoes. Set the timer for 15 mins. After 15 mins, add in the smoked sausage and the corn. Set a timer for 10 mins. After that 10mins, add in the celery and shrimp. Cut the burner off. Let soak for 20 mins. For best results, use the Boil Boss. If using the Boil Boss: Add the boil boss ring to the pot and turn the water on. Using the thermal paddle, stir until the stew reaches the temp in the green, 150 to 160. Let soak for 10 to 20 mins. Now you can enjoy the stew. We like to put it in Reynolds aluminum pans. Traditionally it was served poured out across a table that was covered in newspaper or brown craft paper.
