Easy South Indian Breakfast/ Snack Recipe Using Rice Flour Ingredients: Water - 2 cups Oil/clarified butter - 1 tsp Salt - as per taste Rice flour - 1 cup Methi leaves (Fenugreek Leaves) - 1 cup For Tempering Oil - 2 Tbsp Mustard seeds - 1/4 tsp Cumin seeds - 1/4 tsp Red chillies - 1 Curry leaves - few Garlic cloves - 6(big size) Green chillies - 3 (finely chopped) Methi leaves (Fenugreek Leaves) - 1 cup Salt - to taste Lemon juice - 2 tsp Procedure: 1) Take 2 cups of water in a sauce pan, And add one tsp of oil or clarified butter and a little salt for taste and let it boil. 2) To this add rice flour and stir continuously on a low flame until we get a soft dough. 3)Then transfer the contents into another container so that it cools faster. 4) Grease your hand and give it a quick knead and cover it till it comes to the room temperature 5)After it comes down to room temperature, once again knead it, so that it becomes soft 6)Divide it into small portions.Take one dumpling and cover the rest so that they wont dry up. 7)Now roll this dumpling into thin roll and cut it into 1/2 inch pieces. And now roll these 1/2 inch pieces between your palms to get a nice round shape. 8)Grease the idli plates with ghee or oil and set the balls in the plates. 9)To steam this balls add 2 cups of water to steaming container, bring the water to rolling boil and place the idli stand, then cover it and steam the balls for 10 min on a medium flame. 10)For tempering add 2 Tbsp of oil, to this add mustard seeds, cumin seeds, red chillies, curry leaves, finely chopped green chillies, garlic and methi leaves(remove stalks). 11)Fry methi for a couple of min and add all the rice balls along with some salt 12)Give it a good mix until everything is properly combined on a absolutely low flame and fry the balls for couple of min , so that they soak up the flavors from methi and tempering. 13)Once the methi balls are nice and hot, turn off the flame and add a little lemon juice and the are ready to be served.
