Scent of the Day: Bois 1920 Sushi Imperiale Where to Purchase: http://www.barneys.com/bois-1920-sushi-imperiale-193785006.html My Variation of the Cookie Recipe: Ingredients: 6 ounces coconut oil 12 ounces bread flour (this matters) 1 teaspoon kosher salt 1 teaspoon baking soda 2 ounces baking Splenda or granulated sugar (idk why i subbed this for Splenda, it's irrationally less bad in my mind?) 8 ounces light brown sugar (the darker the sugar you use, the chewier your cookies will be.) 1 large egg 1 large egg yolk 1 ounce whole milk 1 1/2 teaspoons vanilla extract 12 ounces Ghirardelli semisweet chocolate chips Directions: Melt the coconut oil. Sift together the flour, salt and baking soda onto a paper plate. Pour the coconut oil into your stand mixer's work bowl. Add the sugar/Splenda and brown sugar and beat with the paddle attachment on medium speed for 2 minutes. Meanwhile, whisk together the whole egg, the egg yolk, milk and vanilla extract in a measuring cup. Reduce the mixer speed and slowly add the egg mixture. Mix until thoroughly combined, about 30 seconds. Using the paper plate as a slide, gradually integrate the dry ingredients, stopping a couple of times to scrape down the sides of the bowl. Once the flour is worked in, drop the speed to "stir" and add the chocolate chips. Scoop the dough into 1/4 cup portions into cupcake pans (YES...you read that right). Chill the dough for approximately 30 minutes. This is a crucial step, but it is ridiculously hard to do in the bowl after the coconut oil hardens. LPT: Spoon into cupcake pans and THEN chill. Preheat the oven to 375 degrees. Bake for 15 minutes, rotating the pans halfway through for evenness. Remove from the oven. Remove from pan when cool. Wait at least 5 minutes before devouring. WARNING: The center will cave in while cooling and be mostly, but not completely, cooked to perfection.
