Use half for base and half for top crust. https://www.donnahay.com.au/recipes/basics/basic-shortcrust-pastry Grease 25cm tart dish, roll out half of pastry until about 3-4mm thick to line base. Fill evenly with 500g jam. Use other half (same thickness) for the top crust. Brush with maple syrup and sprinkle with sugar.
