This Oat Spinach Cheela/ Chilla is a perfect combo of hearty oats, with a spicy paneer topping that not only boosts the flavor but adds up some protein as well. Best thing being, these can be paired with pickles, yogurt, or even a hot cup of chai ☕ !
INGREDIENTS FOR CHEELA
*2 tbsp flaxseeds/ अलसी बीज
*1 cup oats
*1/2 cup gram flour/ बेसन
*2-3 roughly chopped green chillies
*2 inch roughly chopped ginger
*1 tsp cumin seeds/ जीरा
*1/2 tsp carom seeds/ अजवाइन
*1/2 tsp turmeric powder
*1 tsp salt or as required
*1 cup spinach leaves
*1 cup water
INGREDIENTS FOR TOPPING
*1 large finely chopped onion
*2 medium sized finely chopped tomatoes
*100 gm finely chopped Indian cottage cheese/ paneer/ पनीर
*1/2 cup chopped coriander leaves
*3/4 tsp red chilli powder
*3/4 tsp garam masala powder
*1 1/4 tsp dry mango powder/ अमचूर
INSTRUCTIONS
1- Into a blender, add flaxseeds and grind into a fine powder. Add in the oats and grind them as well into a fine powder. Now add rest of the ingredients of cheela and blend into a smooth and creamy batter. Transfer the batter in a large bowl and keep aside.
2- for the topping, combine all the ingredients of topping in a medium sized bowl. Mix well and keep aside.
3- Now heat up a pan on a low-medium heat. Pour about 1/3 cup of batter and using a back of the spoon spread it into a thin circle. Now spread about 2-3 tbsp topping on top of it and press the topping gently with the spatula. Pour some oil around the edges and let it cook till the base turns crisp.
4- flip the cheela and let the other side cook as well for around 2 minutes. Transfer the cheela on a plate and make more cheelas following the same procedure.
5- Serve the cheela with any chutney, yogurt or pickle and enjoy !!
