Taylor Made Meals Chicken Risotto Part Two As I am going to be twiddling my thumbs I thought I’d share my Taylor Made family meals... As well as having a passion for making cakes I also love to cook. I have a big family so providing them with a decent home cooked meal has always been my passion. The odd time I’ve given them chicken nuggets etc I’ve felt so guilty I wish I’d just made something decent. I have to cook for 7-9 people every night which I love and now they are getting older they will eat more of the rich dinners that I personally love 💓 For my first meal we are having Chicken Risotto.. Taylor Made Chicken Risotto 2 packs of chicken fillets 1 small box of pancetta I large leek 1 large onion 2 garlic cloves Knob of butter Drizzle of olive oil I punnet of mushrooms Parmesan Parsley White wine Vegetable stock Arborio rice Method In a medium saucepan add your vegetable stock to a saucepan full of boiling water. Let it simmer. Heat the olive oil and butter and cook off the pancetta, leeks, onion and garlic for approx 5 mins. Add the mushrooms cook for further 2 mins. Add the chicken and cook until the chicken is sealed. Add your arborio rice and make sure every grain is coated in oil then add your white wine. Let this reduce and turn the heat down to low and start ladling your stock into the risotto only one at a time. Keep Repeating this until the rice is cooked. Approx 25 mins
