Pumpkin Cheesecake Recipe for Thanksgiving / Christmas or other fall holidays is shown in this easy video recipe. I present how to make this tasty cheesecake with real pumpkin puree and farmer's cheese. It combines two most famous baking ideas for a cake in one homemade baking recipe. In the United States the most common ingredient in cheesecake is a cream cheese but it makes any cake more gooey and heavy. In this recipe I use 1 kg of farmer's cheese, also know as quark, which is a more traditional (European) way of preparing this goodie. The farmer's cheese has to be at least three times grounded. You can find this cheese easily at any European/international/Polish/Russian/German grocery store in the USA. This cheese is a secret ingredient for all of my cheesecakes. It makes that the cake is very fluffy, light and gives it its inimitable and very specific taste. For this tasty recipe you will need a mixer. You may prepare it by using whisker but why to make our lives so hard when some neat kitchen equipment can be used. To make this cake you will need to separate 5 egg yolks. Beat egg whites with a pinch of salt and then, at the end, add some sugar and beat egg whites a bit more (sugar will help eggs retain their beaten state). Set this aside. Next you will need to mix well 5 egg yolks and sugar. Then you can add 150 g of sugar, 1 package of vanilla sugar, 1/4 cup of potato starch/flour (same thing...), 1 tsp of vanilla extract, and some shredded lemon peel. Add also 400 g of pumpkin puree. I used my own homemade pumpkin puree here and the link to this recipe is below. When everything is completely blended start adding previously beaten egg whites mixture to the yolk mixture. Combine it slowly using spatula. Don't use mixer. Adding egg whites slowly and gently will prevent cake from collapsing. Pumpkin Puree from scratch: https://youtu.be/0crNInZr-tk I have a really easy and fast technique for cheesecake crust. Cheesecake crust ingredients: 120 g crushed biscuits, cookies or graham crackers 1 tsp cinnamon 1/3 cup melted butter Mix all 3 ingredients in the bowl. Transfer mixture to the leak proof springfform pan and press from the top making even surface. Bake crust at 350 F/ 175 C for 8 - 10 minutes. When crust is ready pour pumpkin cheesecake mixture over it. Bake at 380 F / 195 C for 80 minutes in a leak proof springform pan. This cake continues to bake for some time after it is removed from the oven. Let it cool down after baking. On the top you can spread white chocolate frosting when the cake is cool. Decorate with some chocolate chips. Put it to the refrigerator so the chocolate frosting sets. Store the cheesecake in the refrigerator. Cheesecake is considered in many different cooking environments as a cake, torte, and even as a custard pie because of the separates crust and soft filling made without flour.
