This gluten free crust can be prepared fresh and baked with toppings for a delish take on our regular pizza. This requires chickpea flour which is not easily available at Indian households. You can simply grind chickpeas in a grinder and sieve it to get uniform consistency of flour. Ingredients: 1 cup of chickpea flour (grind 1.5 cups of chickpea and sieve it) 1 1/2 cups water 1 tsp salt 3 tbsps of olive oil or regular cooking oil 1 tsp baking powder Pizza sauce or Ketchuo or Chutney (For making pizza sauce, you can check the recipe - Pizza Sauce) 1 cup of Toppings (veggies of your choice) 1 cup grated cheese (parmesan if you want this to make gluten free) Method: For the crust: 1. Whisk the chickpea flour and salt together in a medium bowl. Whisk in 1 1/2 cups water and 2 tablespoons olive oil until smooth. Cover and let stand at room temperature for 2 hours. 2. Preheat the oven to 425 degrees F with a pizza stone or baking sheet on the bottom rack. Line 2 baking sheets with parchment paper. If you don't want to cook it in an oven, heat a large nonstick skillet over medium-high heat and add 2 tablespoons olive oil. 3. Whisk the baking powder into the chickpea mixture and pour the batter into the hot skillet, swirling to evenly cot the bottom. Cook until just set, about 2 minutes. Flip the crust in the skillet and bake until the top is browned and crisp, about 3 minutes more. If using an oven, Transfer the crust to a parchment-lined baking sheet. For the toppings: 1. Brush the crusts lightly with olive oil. Apply pizza sauce or ketchup on the crust. Arrange your veggies and toppings on the crust followed by grated cheese. 2. Sprinkle some oregano and chilli flakes on the top and let it cook covered with lid till the cheese melts. Open and lid, let it cook for another min and serve.
