In light of the world "sheltering in place", we have decided to show you a recipe you can make with items in your pantry. This Pasta E Fagioli is not traditional by any means, but is nutritious, tasty and comforting. Made gluten free with the use of Lentil and Chickpea Fusili, this will provide at least 4 meals and the whole family will love it. Pasta e Fagioli (Vegan and Gluten-Free) 1 Box Pasta of your choice (we used gluten-free lentil pasta) 2 Tbsp olive oil 2 cloves garlic, sliced 2 Bay leaves 1/2 tsp red pepper flakes 1 sweet onion, diced 1 cup sliced carrots 2 cans of any beans, rinsed and drained Vegetable bouillon cube or base 4 cups water Salt and pepper Fresh parsley to garnish Prepare pasta as directed, drain, reserving about 1 cup of liquid, toss with a little oil and et aside. In a deep pot, heat olive oil with garlic, bay leaves and red pepper until the garlic starts to sizzle a bit. Add onion, cook until soft Add carrots, cook for 1 minute. Add beans, stir. Add bouillon and water, bring to a boil and simmer uncovered for about 30 minutes. Add reserved pasta liquid and simmer until slightly thickened. To serve, scoop about 1/2 cup of pasta into bowl. Top with soup and garnish with parsley. Mangia!
