[RECIPE IN THIS DESCRIPTION] Banoffee Pie (NO BANANAS INCLUDED). This INCREDIBLY HIGH FAT banana based pie is an absolutely treat. It’s creamy and has the banana/caramel taste - just like an iconic British banoffee pie! Just be careful with this one because it’s absolutely delicious but uses A LOT of sugar free sweets that are known to have laxative effects if over consumed! | The Recipe | BASE INGREDIENTS: - 175g (1 & 3/4 cup) Almond Flour - 24g (1/4 cup) Protein Powder (I used Banoffee by MyProtein) - 1/4 cup Sweetener (I used Erythritol) - 1 Large Egg - 2 tbsp Coconut Oil CARAMEL FILLING INGREDIENTS: - 18 Sugar Free Butter Candies (I used Werther's) - 240ml (1 cup) Cream - 2 tsp Banana Extract / Banana Flavouring (I used Banana by Jordan’s Skinny Syrups) TOPPING INGREDIENTS: - 240ml (1 cup) Cream - 1 tsp Banana Extract / Banana Flavouring - 15g (0.5 oz) Dark Chocolate, shaved (70% chocolate or higher - I used 85% Lindt) METHOD: 1. Preheat the oven to 170c/325f. Prepare a 10” tart pan by greasing it. 2. Mix all dry TART ingredients together in a medium bowl. 3. Melt coconut oil and add to the dry ingredients along with the egg. Mix until well combined. 4. Mould into the prepared tart pan. Place baking/parchment paper on top of the dough and weigh it down by placing baking beans evenly on top (I use the cheaper solution - kidney beans!) 5. Bake for 12-15 minutes or until the tart has started to go golden brown. Place aside to cool. 6. Meanwhile prepare the CARAMEL - in a medium saucepan, over a low-medium heat, add the cream and vanilla extract. Bring to a gentle simmer, then once simmering, add the sugar free butter candies. Stir continuously until they have fully melted in the cream and the sauce is thick and glossy. 7. Remove the tart from the pan gently, placing it on a serving plate. Pour the caramel filling in the tart, spreading to coat the base of the tart evenly. Place in the fridge to chill for 20-30 minutes. 8. To make the TOPPING - whip the cream, in a medium sized bowl, until soft peaks form. 9. Spread the whipped cream gently over the caramel sauce in the tart, top with shaved dark chocolate.
