Tormek Sharpening Innovation's video: Restoring a broken Japanese Kitchen Knife with Tormek T-8

How do you restore a broken kitchen knife? It's not as hard as you may think. A few simple steps and the knife will as good as new again. Here we're using the Tormek T-8 Water Cooled Sharpening System together with the SJ-250 Japanese Waterstone. First of all, we're reshaping the knife on the side of the stone. If you want to speed up this process, you can also use the Black Stone SB-250 or Tormek's Diamond Wheel Coarse DC-250, which deliver faster steel removal. The next step is to create a new bevel on the knife. Use the coarse side of the Stone Grader SP-650 to activate the grindstone to its original 220 grit. When done sharpening with that grit you use the finer side of the Stone Grader to make the stone equal to 1000 grit. Finish the process by honing and polishing the knife on the Leather Honing Wheel together with the Honing Compound PA-70. This will remove the burr which develops during grinding. BONUS - Use the SJ-250 Japanese Waterstone of 4000 grit for a mirror finish with hardly any visible marks. This will deliver a superior surface finish and a razor-sharp knife.
