He references Dr. William Davis' book Wheat Belly. People argue that wheat has been consumed for thousands of years, grains were even in the bible. In 8500 BC, einkorn was consumed. It was ground by hand and eaten as porridge. When it was cultivated, it mated with goatgrass, and emmer was created. Emmer is most likely the wheat that was referenced in the bible. Emmer then mated with Triticum tauschii and created Triticum aestivum and that is the wheat that we consume now. In the mid 18th century, there was a count done and there were 5 varieties of Triticum aestivum. But now, there are 25,000 varieties and this was not done by nature, it was done by hybridization. The hybridization was done to make the wheat more heat and cold resistant, to increase the yield, and in hopes of healing world hunger. The hybridization also created celiac. The gluten increases as the number of chromosomes increases. Sean's opinion is, an old school food is not supposed to create a brand new disease. These are not the same grains that have been consumed historically because of the manual hybridization.
