益母草酒雞 (砂撈越語為:Kacama / Kacang Ma 酒雞 )是砂拉越獨創的進補小食,也是在年菜或坐月子餐裡不能少的一份餐點喔! 【新鮮的益母草處理方法】 1. 去掉根和梗的部分,只留葉子。 2. 拿去戶外曬乾為止。 3. 曬乾後,用手搓揉成。 4. 放入熱鍋中,乾炒。 5. 加入白酒頭,炒至葉子乾脆,即可備用。 材料: Kacama / Kacang Ma(益母 草) 甘榜雞 文東薑/老薑 調味料: 麻油 白米酒 做法: 1. 先將雞肉處理乾淨,砍成塊狀。 2. 將薑搗爛,然後擠出薑汁,倒入雞肉,醃製 15 分鐘。 3. 將薑渣留起,備用。 4. 開火熱鍋,乾炒益母草,將益母草炒至乾脆,加入白酒頭,炒至葉子乾脆,備用 。 5. 熱鍋內,倒入麻油,將薑渣炒香至金黃色。 6. 放入益母草和雞肉,繼續翻炒。 7. 加入白酒頭,繼續熬煮。 8. 將全部材料倒入燉鍋內,倒入適量水,蓋鍋隔水燉煮至雞肉全熟,即可上桌享用。 (注: 燉煮時間大約 30 分鐘 - 1 小時 30 分,需視雞隻大小而定。) 貼士: 1. 看雞隻的大小來衡量白米酒的用量,最好用純白頭酒。 2. 可以煮也可以燉,煮的話,水份會被蒸發; 如果用燉,水分和酒氣會被保留。 Motherwort Wine Chicken (Kacang Ma / Kacama Wine Chicken) is Sarawak's original tonic snack, and it is also an indispensable meal in New Year dishes or confinement meals! [Fresh Motherwort Processing Method] 1. Remove the roots and stems, leaving only the leaves. 2. Take it outdoors to dry. 3. After drying, knead it by hand. 4. Put it in a hot pot and dry fry. 5. Add the white rice wine, fry until the leaves are crisp and ready for use. material: Kacama / Kacang Ma (Motherwort) Kampong Chicken Bentong Ginger / Old Ginger seasoning: sesame oil White rice wine practice: 1. Clean the chicken and chop it into chunks. 2. Mash the ginger, then squeeze out the ginger juice, pour the chicken, and marinate for 15 minutes. 3. Save the ginger residue for later use. 4. Turn on the hot pot, dry-fry the motherwort, stir-fry the motherwort until crispy, add the white wine head, and fry until the leaves are crispy. 5. Pour sesame oil into the hot pot, and saute the ginger residue until golden brown. 6. Add motherwort and chicken and continue to stir fry. 7. Add the white wine head and continue to cook. 8. Pour all the ingredients into a saucepan, pour an appropriate amount of water, cover the pot and simmer until the chicken is fully cooked, ready to serve. (Note: The simmering time is about 30 minutes-1 hour 30 minutes, depending on the size of the chicken.) Tips: 1. Measure the amount of white rice wine based on the size of the chicken. It is best to use pure white wine. 2. It can be boiled or stewed. If it is boiled, the water will evaporate; if it is stewed, the water and alcohol will be retained.
