VEGAN CORNBREAD Source: http://www.savvybrown.com/health/sweet-vegan-cornbread/ (adapted) 1 cup all-purpose flour 1 cup yellow cornmeal 3/4 cup sugar 1 teaspoon salt 3 teaspoons baking powder Powdered egg replacer and water that's the equivalent of 1 egg 1 cup non-dairy milk 1/3 cup vegetable oil or melted vegan margarine 1. Preheat oven to 400 degrees F. 2. Spray or grease a 9 inch cake pan. 3. Mix flour, cornmeal, sugar, salt and baking powder in a large bowl. 4. Prepare your egg replacer according to the directions. 5. Stir egg substitute mixture, milk and vegetable oil or margarine together. 6. Pour the wet mixture into the dry ingredients and mix just until the dry ingredients are moistened. Don't over mix the batter; it will be a little lumpy. 7. Pour batter into prepared pan. 8.
