Chocolate Reishi Muffins Ingredients: 2 eggs ⅓ cup maple syrup 1 cup dairy free milk ½ cup avocado oil 2 tsp vanilla extract 1 ¾ cup gluten-free flour ⅔ cup cacao powder 1 tsp baking soda 1 tsp baking powder 1 tbsp instant coffee Pinch of sea salt 2 tbsp reishi powder 1 cup chocolate chips 1 tbsp coconut sugar Directions: 1. In a medium sized mixing bowl, whisk together eggs, maple syrup, milk, avocado and vanilla. In a separate bowl, mix together remaining dry ingredients except coconut sugar. 2. Slowly fold dry ingredients into wet and set aside for an hour or overnight. 3. When ready to bake, line a cupcake pan with liners and preheat the oven to 350 degrees fahrenheit. Portion the muffins evenly across the cupcake pan, and sprinkle a little coconut sugar over each cupcake. 4. Bake for 15-20 minutes or until a toothpick inserted comes out clean (note: the chocolate will be melted, so it might not come out entirely clean).
