It's vegan and gluten-free, but comes super close to the OG recipe. Sashah Handal walks us through making the three delicious layers for a mouth-watering end result. Caramel Delight Cookies: COOKIE: ½ cup Almond Meal ½ cup Coconut Flour ½ cup Shreded Coconut ¼ cup Coconut Oil (might need additional 1-2 tbsp) 8 Dates Pinch of Salt CARAMEL: 1 ½ cup Dates ¼ cup Creamy Peanut Butter 3-4 tbsp Alt-Milk ½ cup Shredded Coconut TOPPINGS: 1 cup Toasted Shredded Coconut 3 Dark Chocolate Bars (I used Hu Simple Dark Chocolate) 1. Toast 2 cups shredded coconut at 350 F for 5-8 mins. It can be delicate so just until it’s lightly golden and fragrant. 2. Combine all cookie ingredients in food processor. Process until you are able to mold a ball without the dough crumbling, approx. 2 mins. 3. Flatten dough out onto a large cutting board (or available smooth surface) until it is approx. ⅓ inch thick. Use cookie cutter, small glass, or mason jar to cut out cookie shapes. Place on parchment-lined sheet tray and allow to set in the freezer for 15 mins--you’ll need your cookies to be firm enough for chocolate dipping. 4. Melt 6 oz of dark chocolate in a double boiler. Place your (very cold) cookie in the melted chocolate and use a spatula to help cover the cookie until it is completely coated. It’s important to do this quickly and carefully so your cookie doesn’t crumble with the heat. Remove cookie from the chocolate with a long tooth fork, give the hand that is holding the fork a few gentle taps to allow excess chocolate to drip off, and use a butter knife to slide cookie smoothly from fork back to tray. Continue process until all cookies are chocola-fied. Place tray back into freezer for 15 mins, or until chocolate hardens. Keep remaining chocolate in double boiler and set aside. 5. While cookies are setting, make your caramel layer. Place all caramel ingredients in food processor, except milk & coconut. Use only half of each of these to start. Process on high until mixture is smooth with few lumps. Continue adding milk until desired creaminess is reached. I used all 4 TBL in order to reach a caramel-like texture. Transfer caramel to a bowl and fold in remaining coconut shreds with a spoon. Top chocolate-dipped cookie with a generous TBL. of caramel, sprinkle a bit more shredded coconut and press down into a flat layer. 6. Once you have added caramel to all your cookies, they are ready for the final chocolate drizzle. If your melted chocolate has hardened, you may need to rewarm. If rewarming is necessary, place cookies back into freezer while doing so. Drizzle the remaining melted chocolate over cookies in thin ribbons. 7. Place back into freezer for 5-10 mins, or until chocolate drizzle is set. 8. Will keep in airtight container in freezer for 2 weeks. Want more from Sashah?
