It’s a little bit different from normal iced tea in that you use cold water to extract the flavour from the leaf rather than hot. That way you get a much smoother more complex flavour coming through the tea. I’m going to make our passion fruit and mango green tea with this method today It’s a beautiful tea, it’s got green gunpowder tea for the base and we’ve blended it with papaya, pineapple, tropical fruit flavours, marigold flowers and rose petals. It’s ideal for cold brew as it’s got a really sweet lovely flavour. And this cold brew bottle we have is uniquely designed to make this type of tea. In the bottle, you add eight teaspoons. You use slightly more leaf than you would for a hot infusion and then you flash heat with a little bit of boiling just to wake up the leaf and let the flavours start to come out. And then take cold water. The cold water really allows the amino acids and the very sweet chemical compounds in the leaf to come through. Pop it in the fridge for three to four hours but ideally overnight and you will have a really refreshing complex flavour to enjoy in the hot weather.
