We head to Eastern Alaska down a road we have only quickly traveled through. Most people don't spend much time on the Richardson Highway, but there are some amazing trails to enjoy overlanding offroad if you have a 4X4 capable van. We love exploring off the beaten path and head to the toe of an Alaskan Glacier called the Glukana, with views of the Gabriel Icefield. A storm rolls in and we realize we are trapped in our Winnebago Revel but we make the most of it and decide it is time to make some Fireweed Jelly. We explore the area for a few days and then decide to go support a local restaurant. This week we visit Sheep Mountain Lodge, great food, great service, and great views. Music: https://www.epidemicsound.com Intro: Renderforest.com Fireweed Jelly Recipe: Fireweed juice: 8 packed cups of fireweed flowers (rinsed) Fill water in pan to just below the flowers. If you add too much water you will loose the color, you can always add more water to the fireweed juice Boil until the flowers turn brown and all the color is boiled out (I boiled mine for about 8-9 minutes) Jelly- Sanitize jelly jars-keep warm Combine: 1 3/4 fireweed juice 2 T Lemon Juice 3 1/2 C Sugar *pinch of pepper flakes, cayenne or jalapeño for spice. (I preferred on spice in this batch) Bring to boil stirring constantly Add 1 pkg Certo while stirring Boil for 1 minute.and stir Remove from heat. Skim top of jelly quickly Pour into glass pitcher Skim again Pour jelly into warmed jars Place lids Hot water bath for 10 minutes or turn upside down until sealed.
