Kitagawahonke Brewery In Inuigura Sake Brewery, we use both traditional Sake-brewing method to produce the handcrafted sake and modern automated design based on our generations of sake experience. We successfully combine human skills and automation to create the most prestigious products of sake. A spirit of craftsmanship and professionalism between the master brewer "Toji" and the brewing team "Kurabito" pervades the whole brewing process The Origin of Tomio The name "Tomio" comes from the word "Tomi Kore Kina" found in 'The Nine Chinese Classics" and can be translated as "Old Sage". "Tomi Kore Okina", or in the Japanese reading "Tomio" was a revered thinker and philosopher who espoused spiritual welfare through quality of one's experience. Sannemon Kitagawa found the word and chose it to represent his best Sake. The idea of "Tomio" expressed the joy of later based upon a healthy spiritual well-being. Inuigura Sake Brewery, thoroughly devoted to sake brewing in Fushimi, Kyoto for more then 350 years, instill this idea of spiritual well-being into "tomio" sake. Music by Tom Phillips
