These delicate and juicy Bacon Cheese Muffins, seasoned with fresh basil is always a great idea for breakfast or lunch for school and work! INGREDIENTS 2 large eggs ⅛ teaspoon black pepper, optional ¼ teaspoon salt 2-3 fresh basil leaves, chopped ¼ cup olive oil ⅓ cup whole milk or water 2 teaspoons baking powder ½ cup parmesan cheese, shredded 4 rashers bacon, chopped into small pieces and fried 1 teaspoon garlic powder ¾ cup all-purpose flour 1 medium zucchini, peeled and grated PREPARATION 1. Preheat the oven to 350°F (180°C). 2. In a large bowl, combine the grated zucchini, shredded cheese, fried small pieces of bacon, chopped basil leaves, flour and baking powder and stir. 3. Add in the milk and oil, mix together using a spoon until just combined. 4. Spoon mixture into prepared muffin tin. The mixture should be slightly thick; add flour to make mixture thicker or add milk to make thinner. 5. Bake 25 to 30 minutes or until toothpick inserted in the center comes out clean. Remove from oven. Remove muffins from tin and cool on a wire rack.
