Almond is a recommended ingredient for diabetics. Low on carbohydrates, lots of protein from eggs and almonds, and functional foods like cinnamon. Yield: Serves 6-8 Prep Time: 15 Mins Cook Time: 35-40 mins Protein: Egg INGREDIENTS (50 gms) ½ cup Cocoa powder (50 gms) ⅓ cup Milk powder (no-added sugar) (125 ml) Apple puree unstrained or 1 Apple cored and pureed (50gms) 4 tbsp Pitted Dates, soaked and pureed (can be soaked, then pureed with the apple) (100 ml) ½ cup + 1 tbsp Olive Oil 50 ml ⅓ cup + 1 tbsp Ghee 3 Eggs (125 gms) 1 ¼ cup Almond powder (25 gms) 1 ½ tbsp Horse gram, roasted and powdered (4gms) 1/2 tsp Baking Soda Zest of 2 Oranges (35 gms) 2 tbsp Dried cranberries (optional) (o.5 gms) 1/4 tsp Chili powder (0.5 gms) 1 Pinch Cinnamon powder Pinch of Salt METHOD Preheat the oven 170 degrees Celsius for 10 mins Mix the cocoa powder and milk powder in the apple-date puree, leave aside Beat oil, ghee and eggs well till foamy Add the baking soda, chili powder, cinnamon powder and salt to the almond flour and mix together well Fold dry ingredients into the egg mixture. Fold in the cocoa mixture till incorporated. Add the orange zest and cranberries and mix well. Pour the batter into a 9 inch greased baking tin and bake for 35-40 minutes till fork comes out clean. The fork will have some steam/moisture, which will get abosorbed as cake cools. Allow it to cool completely in the tin, then invert onto a wire rack and let it cool Eat warm or cold with a little no added sugar, custard or icecream. NOTES Can be served with cool coconut milk or coconut cream instead of ice cream or creme anglaise
