I recently had the good fortune to be in the proximity of a remarkable village in Yunnan, China -- Qibuchang -- that specializes in one thing: producing stinky, hairy tofu. For eating. It's aged for days, starts to ferment, and then literally grows “hair” as a result of the mold that grows on it. And so of course I had to try some! But before you gag, consider that lots of things Westerners might consider ordinary -- moldy cow liquid, for example -- are considered revolting in China. So keep an open mind, and when in Rome...!
