OK, Chilies or Chillies, it makes no difference, we all know what we mean. If, like me, you grow your own Chillies, you want to preserve them so you can enjoy them for longer. Air drying Chillies is easy. All you need is a needle with a large eye, some cooking twine, an old wax candle and some chilies (Of course) Simply thread the twine onto the needle, draw the twine over the candle to coat it in wax (helps make the fruit slide easy and preserves the twine) then, one at a time, pierce the Chillies through the green top and slide along. Repeat this until you have all the chillies on the thread, then tie the ends and hang in a warm, dry place.
