My sister and I got inspired by the Great British Bake Off and attempted to make a lemon drizzle cake! Turns out it was a bit more of a struggle than we initially thought! Ingredients: 170g unsalted butter 170g caster sugar 3 medium eggs 170g self raising flour 1 teaspoon baking powder Zest of 2 lemons Juice of 2 lemons (for the drizzle) 110g icing sugar (for the drizzle) Utensils: 2 mixing bowls (one large for the cake mixture and a smaller one for the drizzle) A wooden/silicon spoon A spatula A baking tin of your choice (we used a loaf tin) A fork A spoon A small sieve (optional) A skewer or cocktail stick Method: - Pre heat your oven to 180 degrees celsius and grease your cake tin - Cream together the butter and sugar in your large bowl - Add the three eggs, flour, lemon zest and baking powder, mix until combined - Pour your mixture into the cake tin, smooth over and place in the oven for about 30-40 minutes - Turn the cake around after 15 minutes to ensure an even bake - While your cake is in the oven, make your drizzle by mixing together the icing sugar and lemon juice in the smaller bowl - Once your cake is cooked, take it out of the oven and leave it to cool in the tin for about 10 minutes - After this, use the skewer or cocktail stick to make holes in the cake to allow the drizzle to absorb - Pour one layer of drizzle over the cake and allow this to absorb for about 5 minutes before adding more drizzle - Slice and serve!
