It might seem silly, but majority of Thai restaurants in the USA slice shallots sloppy, and often use red onion in place of shallots. It's important to slice with the grain. When frying, it's fine to start in cold oil–gradually raise the heat and cook at a low bubble. If it browns too fast, it will burn and be overcooked before it has the time to cook throughout.
