O Nouvelle era formado na época por Guga Stroeter (vibrafone e bateria), Flávio Mancini Jr. (contrabaixo), Carlos Fernando (voz), Luca Reale (piano e clarineta) e Maurício Tagliari (guitarra). O repertório era composto por versões em "jazz acústico" de standards dos anos 30 a 50, de autores como Duke Ellington, George e Ira Gershwin, Rodgers & Hart, Charles Mingus e outros. Com apoio e crítica e público, em 1988 foi lançado o primeiro disco, "Nouvelle Cuisine", onde se destaca as interpretações de "My Funny Valentine", "Embreceable You". Em 1991, lançam"Slow Food", com produção de Oscar Castro-Neves, agora tendo no repertório composições brasileiras, de Caymmi e Djavan, bem como "Luzes", que Caetano Veloso compôs para o grupo, e ainda uma participação de Gal Costa. O álbum seguinte, "Novelhonovo" (sem Flávio Mancini), foi bem brasileiro, indo de Ismael Silva, Dona Ivone Lara a Chico Buarque e Gil. Apenas "Stormy Weather" lembrava a época dos standards. O quarto disco, "Freebossa Confessional" (sem o vocalista Carlos Fernando), apresenta a banda com o nome reduzido para apenas Nouvelle, e repertório eclético, que vai de Dorival Caymmi e Edu Lobo a Duke Ellington e Django Reinhardt. Ainda na ativa, apens como Nouvelle, a banda continua com Maurício Tagliari, Luca Reale e Guga Stroeter da formação original.
