The plates have a corrugated shape which allows for the use of a thinner plate. They are thin which makes the transferring of heat much more efficient. They are made of materials with good thermal conductivity properties. The plate corrugations create turbulent flow, which helps keep the plates clean whilst also increasing the heat transfer rate. A lot of engineering design is present in these plates! Don't judge them by their simple appearance!
