Clips from my 2009 video Raw Food Recipe: Jicama Fries https://www.youtube.com/watch?v=qnsPzfCWazQ I used to say jicama is like a Mexican potato you can eat raw but the internet describes it as a Mexican turnip I guess it is more like a turnip because it’s watery https://en.wikipedia.org/wiki/Pachyrhizus_erosus Ingredients: 1 jicama Cold pressed olive oil (see note) 1/2 TSP sea salt 1/4 TSP garlic powder Cayenne powder (to taste) Black pepper (optional) Note: I used 3 TBSP of olive oil which was WAY too much 1 TBSP would have sufficed and actually you don’t even really need it Use a knife to peel the skin off the jicama Cut the jicama in half then cut into fries Put the jicama fries in a mixing bowl Add the rest of ingredients Mix it up (using tongs helps) Put the jicama fries on a plate Enjoy!
